Originally, the Cataplana was used either directly on open fire or on coal or wood-fired stoves. The pot itself is closed with clamps and now works similar to a conventional pressure cooker without really building up pressure.
Your food is cooked gently and preserves its taste = healthy cooking! Since the bottom of the traditional Cataplana is rounded, cooking on modern electric stoves, such as a ceramic hob, is not possible. Our aluminium Teflon Cataplana is ideal for this, or the copper Cataplana with flat base in combination with a corresponding induction adapter plate.
